Málaga Tapas & Bar has hired Mario Medina as executive chef. Medina, who was born in Chihuahua, Mexico, came over from Shawn Cirkiel’s Chavez, where he served as chef de cuisine until August. Medina has reshaped the tapas menu at the Warehouse District restaurant and bar. The new menu includes items like salmon a la plancha with cauliflower,capers and raisins ($13); lamb shoulder with potato puree; and strip steak with mojo rojo ($12)
“I am extremely excited to lead the kitchen at Málaga, where I have the opportunity to create a menu that reflects my passion for food and quality ingredients,” Medina said. “A new focus of ours will be a dedication to finding quality, locally sourced ingredients.”
Medina moved to Austin to open Chavez in 2013; his previous stops include working as sous chef at Jose Andres’ Jaleo in Las Vegas.
