South Congress Hotel announces two restaurant concepts and executive chef

The South Congress Hotel has announced the dining and beverage operations that will anchor the luxury boutique hotel expected to open this summer. The 83-room hotel at 1603 S. Congress Ave. will feature two restaurants, Central Standard, a New York-style bar and grill, and Café No Sé, a California-influenced Americana restaurant, according to the Statesman’s Gary Dinges.

Executive chef Michael Paley, formerly of Proof on Main and Garage Bar in Louisville and the 21c Museum Hotel and Metropole in Cincinnati, will oversee the culinary operations for the two restaurants. The hotel will also include a coffee shop, juice bar and collection of locally owned retail shops.

The South Congress Hotel is operated by Violet Crown, the company which also operates La Condesa, Sway and Hotel Ella.
