Restaurant construction always gets people talking, especially when it is a highly visible space like Juliet. The Italian restaurant, which takes the place of former Umami Mia Pizzeria and Romeo’s before that at 1500 Barton Springs Rd., is expected to open before the end of June, and today we get a first look at what to expect.

Executive chef Jacob Weaver, who honed his Italian skills at Asti, has crafted a classic Italian menu full of antipasti (meatballs, crudo, fried ceci beans), pasta (spaghetti carbonara, rigatoni pomodoro), and grilled items like beef tenderloin and game hen. The menu will also include an olive oil tasting featuring selections from around the world. The olive oil will be served with bread from pastry chef Carly Rossmeissl, formerly of Easy Tiger.
