Tim Love’s Lonesome Dove Western Bistro opens downtown Thursday

He’s led more than a thousand people through grilling demonstrations at Auditorium Shores and Butler Park. He and his team have cooked thousands of burgers at Austin City Limits Festival. He’s a founding partner of the Austin Food & Wine Festival. It seemed only a matter of time before celebrity Ft. Worth chef Tim Love opened a restaurant in Austin.

Love opens his Lonesome Dove Western Bistro in Austin at 419 Colorado St. in the former Kenichi space on Thursday. The opening comes 15 years after the gregarious lover of open-fire cooking opened his restaurant of the same name in the Ft .Worth stockyards.

The restaurant specializes urban cowboy cuisine, with dishes like elk-foie gras sliders with blueberry jam, deviled Gulf Coast blue crabs, lamb brisket pazole stew, rabbit tenderloin with confit shepherd’s pie and morel rings, and burnt carrots with Texas honey, meyer lemon, and goat cheese. The menu also features a section of spit-roasted wild game and hand-cut steaks like eight-ounce beef tenderloin and 14-ounce buffalo ribeye. The beverage program will feature a wide selection of Old and New World wines, specialty cocktails and local beer.

“I truly believe that Austin is one of the greatest cities in the country. The music, the architecture, the culture, and of course, the food, is out of this world,” Love said. “Austin feels like the perfect home for my style of cooking and opening a restaurant here has been a big dream of mine for a long time. I’m incredibly proud to be here alongside all the talented and creative chefs in the city and am excited to officially call Austin my second home.”

The modern Western space, which includes pine wood tables, cowhide-covered banquettes, and taxidermy from Love’s personal collection, was designed by Joel Mozersky Design and Dick Clark Architecture.

Lonesome Dove Western Bistro Austin will be open Monday-Saturday from 11 a.m. to 2:30 p.m. for lunch and from 4 p.m. till midnight for dinner.
