The pig-centric Cochon 555 returns to Austin on October 18. The celebration of global styles of barbecue takes place at the Driskill hotel and will feature a roster of Austin chefs that includes Josh Jones of Salt & Time, Andrew Wiseheart of Contigo and Gardner, Sarah McIntosh of Épicerie Café & Grocery, and Thai Changthong of Thai-Kun.
Each chef is given 180-pound heritage hog and must present six different dishes to a panel of judges that includes Daniel Olivella of Barlata, Andrew Curren of Italic and Shane Stiles of Stiles Switch.
Beverages will feature offerings from Eagle Rare, Buffalo Trace, and Breckenridge Bourbon. Tickets are $100 and include food from each of the chefs and endless drinks. VIP tickets, which include early admission, cost $200. Visit Cochon555.com for tickets and more information.
