Now open: Former Musashino head chef opens Fukumoto today in East Austin

Longtime Musashino veteran Kaz Fukumoto opens his eponymous izakaya and sushi restaurant in the Corazon building at 514 Medina St. in East Austin today. The casual Japanese restaurant serves dinner with a menu that includes appetizers (deep fried tofu with bonito flakes, monkfish liver with ponzu), tempura (maitake mushrooms, shrimp), sushi (big eye tuna, mackerel), traditional rolls (negitoro, squid), and yakitori (chicken thigh, gizzard, heart and wing). Appetizers range in price from $5-$14, sushi from $3.50-$9 and yakitori from $3-$5 per skewer.

Fukumoto started his career as a dishwasher 16 years ago, and worked his way up the ranks at the popular sushi restaurant near Northwest Hills. He served as head chef there for 10 years before leaving in September 2014. After leaving Musashino, Fukuomoto spent three months honing his yakitori skills at Hiroya in Tokyo.

Fukumoto is open Monday-Thursday from 4:30 p.m. to 10 p.m. and Friday and Saturday until 11 p.m.
