Jack Allen’s Kitchen owner opens seafood restaurant in Round Rock

Jack Gilmore, the chef and owner behind the wildly popular Jack Allen’s Kitchen, opened his seafood concept, Salt Traders Coastal Cooking, today at 2850 I-35 in Round Rock.

Executive Chef Chris Ten Eyck and chef Tom Rummel, who both have long histories with Gilmore dating back to his time as the executive corporate chef for Z’Tejas, helm the kitchen that owners say takes inspiration from the American coastline, from the Gulf Coast to the East Coast.

The seafood-centric menu features bar snacks like snapper collars and entrees such as redfish on the half shell, but also includes wood-fired chicken, steak and pork chops.

The restaurant, which offers a full bar and covered patio, is open Sunday-Thursday from 4 p.m. to 10 p.m. and until 10:30 p.m. on Friday and Saturday.
