Hill Country-inspired Pitchfork Pretty will open in East Austin with veterans of Coi, Eleven Madison Park and Otoko

Native Texan Seth Baas returns from a stint in California to open Pitchfork Pretty this spring at 2708 E. Cesar Chavez St. near Pleasant Valley Road. The kitchen, will focus on live-fire cooking will be helmed by executive chef Max Snyder, a veteran of Coi and Saison in New York City and Eleven Madison Park in New York City, while Alexander Doubey, the former service director at Apis and opening general manager at Otoko, will run the front of house.

“Our food will focus on seasonal ingredients, nutrition and balance,” Snyder said in a release. “We’re preparing an imaginative menu of Hill Country cuisine using local produce, pastured meats, wild fish … and sometimes fried chicken.”

The restaurant is slated to open in March.
